I'd recommend Las Peñitas, Nicaragua. It's a sleepy surf town with miles of uncrowded beach. I had some really productive beginner lessons with a local. Might need an intermediate command of Spanish, as it's still relatively unknown to the wider tourist crowd who flock to San Juan del Sur.
Thanks for the recommendation Trey! We didn't get a chance to surf while in Nicaragua. I love the undeveloped surf spots where the reward is a cold cerveza in a hammock or palapa. If that's Las Peñitas, I'm in! We only included places we'd surfed first hand, so this will go on our list to try. Much appreciated.
